PROBLEM TO BE SOLVED: To produce noodles having a V-shaped groove in the cross section of noodle strips reduced in boiling time. SOLUTION: The noodles comprise noodle strips having a circular virtual cross section, one groove in the longitudinal direction of the noodle strips, the cross section of the groove in a wedgy shape cut in the center direction at 20-60 deg. angle of the wedgy groove, the depth of the groove of (1/2) to (4/5) the noodle thickness and the tip of the wedgy groove formed into a semicircular shape formed of a circle, having a diameter of 0.025-0.15 the diameter of the noodle strips and inscribed with the wedgy groove. The area occupied with the groove part is 6-45% based on the area of the virtual cross section of the noodle strips. When the noodles are produced, extrusion molded grooved noodles are predried and then normally dried. In the process, the predrying is carried out under conditions of 50-65 deg.C atmospheric temperature and 55-70% RH atmospheric humidity. |
