PROBLEM TO BE SOLVED: To hardly deteriorate the peak of sweetness and obtain an economical sweetener composition excellent in eating safety by adding a small amount of a taste improving agent composed of rutin and/or its derivative to a food, etc., using a sweetener of a high sweetness. SOLUTION: A taste improving agent sample (rutin, glycosylrutin or galactosylrutin) is respectively added and dissolved in aqueous solutions of sweeteners of a high sweetness corresponding to the sweetness of a sugar solution at 8% concentration (e.g. a 0.04% aqueous solution of aspartame, a 0.05% aqueous solution of stevia, a 0.06% aqueous solution of enzymically treated stevia, a 0.061% aqueous solution of acesulfame K, a 0.016% aqueous solution of sucralose, a 0.004% aqueous solution of alitame, etc.). In the process, the taste improving agent sample in an amount of 0.1-20 pts.wt., based on 100 pts.wt. solid content of the aqueous solution of the sweetener of high sweetness is added thereto to afford the objective sweetener composition. |
