PROBLEM TO BE SOLVED: To provide low strength agar-agar capable of avoiding any trouble in an acid treatment and its production method. SOLUTION: This production method comprises a process 1 treating seaweed with an alkali, as necessary, a process 2 extracting agar-agar component from the treated seaweed, a process 3 filtering an extracted solution, a process 4 gelatinizing the filtered solution, a process 5 dehydrating the gelatin by freeze- thawing or pressing, etc., and a process 6 drying the concentrated gelatin to obtain dried agar-agar. The resultant agar-agar is pulverized and a heat-treating process 7 is applied to the powder agar-agar. The heat treatment is performed by charging humidified powder agar-agar in an extruder under a condition of at 90-180 deg.C die plate temperature under 7-15MPa pressure. |
