The method of the present invention comprises heating a thermo-labile substance, dispersing it into droplets at a constant positive pressure and cooling the droplets in two steps. The first step comprises cooling the droplets down to the phase transition temperature of the droplet material from a liquid state to a meta-stable state so as to form granules, while the second step comprises cooling the droplets down to the solidification temperature of the complete mass of each granule. The equipment of the present invention comprises an endless strip (7) that stretches on a refrigerated drum (8) which is separated from a dosing device (2) by a distance (B) determined by the relation B = pi . D . n . t/60. The dies (4) of the dosing device (2) have ends which are separated from the upper side (13) of the film (7) by a distance (H) that ensures the full shaping of each free-falling droplet before it reaches said film (7).
