FIELD: microbiology, food industry. SUBSTANCE: strain Bifidobacterium infantis 73-15 is isolated from intestine of health infant. Strain B. infantis 73-15 multiplicates actively on nutrient media of different composition, accumulates industrial biomass to 16-24 h culturing at content of microbial cells lg 8/1 ml. Strain ferments milk to 24 h culturing and forms clot of good taste and organoleptic properties. Strain produces acids and shows antagonistic activity with respect to pathogenic and opportunistic microorganisms. Strain is resistant to some antibacterial agents.
