Preparation of small meat-based sausages or meat-rolls especially for snack consumption comprises finely cutting semi-frozen fat-free meat, the meat representing more than 50% of the total mass. The meat ingredients are cooked and reduced to a paste while still hot. Fruit ingredients are finely cut together with frozen fruit juice (ratio 1:3) and the fruits are boiled, separated from the juices and finely cut while hot and mixed in with the meat paste. The fruit juice is added to the mixture of meat and fruit mass with gelatine, and herbs, spices and mineral ingredients are added and mixed in as required. The resulting mixture of meat, fruit and herbs is sub-divided into portions, the portions are part-dried at 5-10 degrees C and the portioned sausages are hot-smoked. |
