PROBLEM TO BE SOLVED: To provide a batter composition capable of industrially producing fried foods having a palate feeling with crispy feeling like hand made foods. SOLUTION: This composition contains a fraction comprising gliadin as the main component extracted and separated from wheat gluten by using aqueous solution of ethanol, in an amount >=0.5wt.% as gliadin.
