REMOVAL OF TYROSINE PRECIPITATED ON BAMBOO SHOOT

PROBLEM TO BE SOLVED: To dissolve and remove tyrosine precipitated on bamboo shoot and obtain a processed bamboo shoot having good appearance by treating a bamboo shoot having precipitated tyrosine with an alkali under specific condition. SOLUTION: Tyrosine precipitated on processed bamboo shoot such as canned bamboo shoot boiled in water is dissolved and removed by treating with an alkaline aqueous solution having a concentration of 0.1-1.0% at 40-75 deg.C for 2-20min. Tyrosine is easily removed in a short time without deteriorating the quality of the bamboo shoot to prevent the lowering of the commercial value.
