PROBLEM TO BE SOLVED: To obtain a new perfume glycoside comprising a specific perfume glycoside obtained by reacting a saccharide with N-acetylglycosaminide of a perfume under an enzyme as a catalyst, excellent in perfume-releasing properties and persistence of perfume-releasing and useful as a component, etc., of cosmetics, etc. SOLUTION: This perfume glycoside is the new one of formula I [R is a residue of phenethyl alcohol, geraniol, citronellol, cinnamyl alcohol, cis-3-hexenyl alcohol or menthol; (n) is a natural number of 1-3] excellent in perfume-releasing properties and persistence of perfume-releasing and useful for formulation, etc., for a composition of cosmetics, etc. The compound is obtained by reacting a saccharide of formula II with N-acetylglycosaminide of a perfume of formula III in the presence of lysozyme and/or α-amylase as a catalyst. |
