A recipe for baked and stuffed tomatoes is based on cutting off the tops of the tomatoes and removing their seeds. They are placed in ramekins, covered with olive oil and baked in an oven at 120 deg C for several hours after which they are stuffed or garnished. The oven used for cooking the tomatoes is heated by the sun. The stuffing used contains chopped roasted peppers, anchovies and olives and ground almonds. |
