The variable pressing and cutting device is for meat etc. It has a housing (44) which contains an initial feeding worm (10), a compressing worm (15) and a knife assembly (35). This knife assembly consists of a triangular spider mounted on the same shaft as the worms. It is fitted with three detachable cutter blades. The initial worm for moving the meat toward the compressing worm has a coarser pitch than the compressing worm.
