PURPOSE:To provide a method for producing roasted onion excellent in balance of flavors on industrial scale. CONSTITUTION:A paste-state material is prepared from onion. Two kinds of roasted onions, i.e., one with a roasted flavor and the other with a sweet taste are prepared from this paste-state material by strongly roasting the paste-state material and by weakly roasting it. Both kinds of the roasted onions are blended in a suitable ratio so as to readily produce the objective excellent-flavor roasted onion having the roasted flavor in combination with the sweet taste. In addition, the flavor balance between the roasted flavor and the sweet taste can arbitrarily be controlled and, accordingly, various kinds of products having various kinds of flavors can readily and stably be produced and supplied. |
