PROBLEM TO BE SOLVED: To obtain an edible bacterial cellulose composition that contains bacterial cellulose having a structure obtainable by agitation culture, and improves viscosity, fluidity and water-retentivity and texture of products to be suitable for coating of deep fried fish and vegetables. SOLUTION: This edible bacterial cellulose composition having a structure obtainable by agitation culture comprises a bacterial cellulose which has 1.6×10<4> or larger polystyrene-converted weight - average polymerization degree and is subjected to dissociation treatment, and one or more components selected from polypeptides and edible polysaccharides. |
