PROBLEM TO BE SOLVED: To obtain a liquid preparation capable of carrying out transparent and stable coloring of aqueous foods including beverage by atomizing a composition comprising a carotenoid-based pigment for food and a polyglycerin fatty acid ester so as to exhibit a specific permeability. SOLUTION: This preparation is obtained by atomizing a composition comprising (A) a carotenoid-based pigment for food (e.g. pepper pigment, marigold pigment or β-carotene pigment) and (B) a polyglycerol fatty acid ester and has >=99% transmittance in 660nm wavelength when absorbance of the visible part in maximum absorption wavelength is 1. Furthermore, optimum addition amount of the component B is preferably 2-30wt.% and treatment by one or more passes under >=800kgf/cm<2> is preferable as solubilization condition. Most preferable means for atomizing treatment of the components A and B is to use high pressure homogenizer. Thereby, transparent and stable coloring of beverage, jelly, frozen dessert is made possible without using specific gravity adjusting agent. |
