PROBLEM TO BE SOLVED: To obtain the subject finely divided material, capable of preventing browning or deterioration in taste due to heat, light, etc., effectively utilizing physiologically active substances in cells and useful as a healthy food, etc., by heating a suspension of a finely divided chlorophyll-containing material regulated in a prescribed pH region at a temperature within a specific range. SOLUTION: This finely divided chlorophyll-containing material is obtained by heating a suspension of the finely divided chlorophyll-containing material regulated to pH10-12 such as green algae at 60-130 deg.C. The suspension of the finely divided chlorophyll-containing material preferably contains saccharides selected from black sugar or molasses. |
