PROBLEM TO BE SOLVED: To obtian a sweet potato juice high in the content of a pigment originated form the raw material and in a sugar content, low in a pulp content, having a brilliant color tone, and good in a throat touch by treating sweet potato having a high pigment content under specific conditions. SOLUTION: Sweet potato having a high pigment content, such as high carotene content sweet potato containing β-carotene in an amount of >=1.0wt.%, is thermally treated under such conditions as substantially inactivating a polyphenol oxydase contained therein but activating an amylase, and subsequently press-squeezed with a press type squeezer equipped with a screw and a screen surrounding the screw under conditions satisfying the inequality [P is the exit pressure (kgf/cm<2> ) of the press type squeezer in a value of 0.01-20; S is a screen hole diameter (mm) of 0.050-1.0] to obtain the sweet potato juice. |
