The invention concerns a method for determining on the body of a slaughtered animal, viz. a pig, placed along a main axis, the optimal position for using a disjointing device - called disjointing position - comprising the following steps: using a mechanical device for directly determining the disjointing position, comprising a notched jig defining a reference plane; placing the jig with its notch around at least one part of the animal body, externally, towards and starting from its dorsal portion, in an approach position located in the zone of the disjointing position but away from it towards the rear of the animal; from the approach position, bringing the jig against the mastoid bone in an inclined position, such that the reference plane is inclined relative to a plane transversal to the main axis, at an appropriate acute angle alpha , in the direction from the dorsal portion towards the ventral portion, and from the rear legs towards the front legs or the head. |
