PURPOSE:A surfactant is added to an albumin liquid and the albumin is dried, thus producing dried albumin that is hard to froth even when the powder is dissolved in water with facilitating the operation and gives coagulated albumin with high gel strength. CONSTITUTION:In the production of dried albumin by drying albumin liquid, 0.5-10 parts of a surfactant is added to 100 parts, based on the solid components, of the albumin liquid. When the amount of the surfactant added is small, the effect is unsatisfactory and the excess amount lowers the purity of the albumin and does not increase the gel strength and effect of preventing fronth. The surfactant is preferably added in the form of emulsion in an appropriate amount of oil and yoke can be used as a preferably dispersing agent. |
