PROBLEM TO BE SOLVED: To provide a chitosan-contg. gelatinized food which eliminates the gritty feel peculiar to chitosan powder at the time of eating and has good texture. SOLUTION: The chitosan fine powder which passes >=80% of ASTM mesh #140 (= mesh opening 106μm), more preferably ASTM mesh #200 (= mesh opening 75μm) is incorporated into the gelatinized food. |
