摘要 PURPOSE:To measure concentration of alcohol and an extract component quickly and accurately, by measuring the concentration of alcohol, from which a nonvolatile component in a liquid including aqueous alcohol that has an extract component such as a saccharide and an amino acid as a nonvoltatile component is removed, by a volatile-component measuring apparatus and thereafter correcting the result by the specific gravity. CONSTITUTION:A liquid includes an extract component such as a saccharide and an amino acid as a nonvolatile component such as Japanese sake, beer, and wine. The concentration of liquid is measured by an alcohol concentration meter by using N2 or the like as a carrier gas. Said meter has a porous partitioning-wall tube having hydrophobic continual minute air holes, e.g., a tube made of polytetrafluoroethylene resin that has minute air holes of 0.1-1mm.. The concentration is measured as follows: the concentration of alcohol component is measured by the concentration of the volatile component in the liquid, which is transmitted through the partitioning wall and diffused into the carrier gas, as the concentration of (water + alcohol). The specific gravity of the liquid to be measured is measured. The concentration value is corrected by a specific conversion formula. Said measurement and correction are automated by a microcomputer. The measurement is performed quickly and accurately. Thus the concentrations of the alcohol during the manufacturing process and the alcohol and extract component of a product are accurately detected.
