PROBLEM TO BE SOLVED: To obtain a new substituted amino acid derivative useful for prevention and treatment of infectious disease, immune disease, inflammation, cancer, transition, asthma and cardiovascular disease. SOLUTION: This new substituted amino acid derivative is represented by the formula [R' and R' are each a (substituted) alkyl, a cycloalkyl, a (substituted) aryl, an aralkyl, a heterocycle, etc.; R<3> and R<4> are each H or R<1> ; X is O, NH, N(a lower alkyl) or S], e.g. 2-[acetyl-(4-methoxy-benzyl)amino]-N- cyclohexyl-2-(2,3,4,6-tetra-O-benzyl-βDglucopyranosyl)-acetamide. The compound of the formula is obtained by reacting, e.g. a carbonyl component, several or whole of the carbonyls of which is glycosylated, or having a carbohydrate group, carboxylic acids, amines and isonitriles each other in a solvent.
