PROBLEM TO BE SOLVED: To obtain a frozen French toast having a specific amount of water capable of easily and quickly cocking a French toast having a soft and moist taste. SOLUTION: This frozen French toast is obtained as follows, for example, milk, granulated sugar, whole egg liquid, liquid egg yolk, dairy cream, vanilla flavor, etc., are charged into a tank which has an agitator, and mixed then the mixture is sterilized by heating for five minutes at 63-65 deg.C by using a tank having a jacket or a plate heater to afford a slurry composing the French toast, a properly sliced bread is soaked in the slurry then the soaked bread is burned in an oven, etc., 8-10min at 230-240 deg.C, cooled then rapid frozen at -30 to -40 deg.C to afford the frozen French toast having 50-69wt.%. of water. |
