The invention concerns a machine for cutting out calibrated pieces of food products comprising: a chamber (E) in which the product is placed; at least one cylinder (V) provided with a thruster for directing the product towards a cutting grate system capable of producing a plurality of cuts along two orthogonal planes; a cutting blade arranged in front of the grate system for cutting up the product into pieces as it is moved through said grates. The chamber (E) has means (9) for the detachable mounting of elements (7, 8) for shaping and giving predetermined dimensions, for delimiting an internal volume (V1) corresponding to the external volume to be cut out, for accurately centering in said internal volume (V1) thus produced, the cutting grates being mounted in an opening of a support defining a form corresponding to that of the internal volume produced, said form being arranged co-axially to said volume (V1).
