PURPOSE:To obtain a processed food of MISO (fermented bean paste) of new and unique taste having unique flavor and tastiness by separating a surface part from fermented soybeans (by natto bacilli) subjected to frying processing under reduced pressure and then using the separated surface part as a food or its raw material. CONSTITUTION:Fermented soybeans are placed in a decompressive vessel, immersed in a vegetable oil heated under a reduced pressure of 17Torr and fried in a short time while being stirred. The fried fermented soybeans are then placed in a centrifugal separator to remove an oil content. The resultant soybeans are subsequently cooled and placed in a screen to separate the surface part, which is then mixed, etc., in another food (e.g. a seasoning) to afford the objective processed food. |
