PURPOSE:To obtain the subject additive for rice grain capable of providing a boiled rice having proper softness, proper stiffness, proper viscosity and an excellent taste even by boiling a tasteless rice or an old rice by blending an acid or gluconic alpha-lactone with a protein. CONSTITUTION:An objective additive for rice grain composed of an acid or gluconic alpha-lactone and a protein. As the acid used, a nonvolatile acid is preferable and a surfactant may be added to the above mentioned additive for rice grain. The subject additive for rice grain is used by addition thereof to a cooking soup or to rice grain in boiling thereof or by addition thereof to a boiled rice in air. In addition, amino acids which are decomposed substances of the protein may be used in place of the protein and an aqueous solution of the additive for rice grain may be sprayed on the rice grain. As the amount of the additive used, the acid or gluconic delta-lactone is used in an amount enough to form 10-15mM cooking soup and the protein is used in an amount of 0.005wt.% based on the rice grain. |
