PROBLEM TO BE SOLVED: To prepare a readily edible TERI-YAKI (grilled with soy sauce)-like fish meat food having a TERI-YAKI-like taste permeated even to the interior thereof and a good taste without any fishy smell thereof. SOLUTION: A small block 1 of fish meat such as mainly a tuna is pickled in a seasoning liquid prepared by adding a sweetener, a seasoning, a spice, etc., to a soy sauce as a base and seasoning the soy sauce with a bitter-sweet taste for a required time and uniformly seasoned even to the interior. A prescribed amount of the seasoned small block 1 is then placed in a forming container, bound to a strip unit, formed, frozen for >=24hr and then steamed in the intact frozen state until the small block 1 is heated up. The resultant steamed small block 1 is further frozen for >=4hr to grill the surface while keeping the small block 1 in the frozen state. Burnt marks 2 are then formed on the surface to slice the resultant small block 1 into thin sheets. Thereby, the objective TERI-YAKI-like fish meat food is prepared. |
