There is provided a grafting method of fruits and vegetables wherein grafting can be made simply and easily without grafting clip, rapid joining or taking root is achieved stably after grafting, and wilting phenomenon can be prevented at the time of growing. A patent stock(10) is excellent in grafting affinity and symbiosys affinity, is transplanted into and fostered in the gourd plant which is well resistant to diseases, whose a group of roots is well developed and which grows well in low temperature or in tray 50 pots or tray 72 pots of the eggplant family which is well resistant to diseases. After a seedless watermelon, cucumber, musk melon, eggplant, red pepper and tomato, etc. are selected, they are fostered in a state of a seed leaf without normal leaf on a seedbed by using a stem for grafting(20). After completing the parent stock(10) and the stem for grafting(20) as hereinabove, a grafting projection(221) formed on embryo axis of the stem(20) is joined to grafting holes(121) formed on the parent stock(10). And, at the time of grafting, a lot of nutritions are provided with cambia tissue within the parent stock(10) and the stem for grafting(20) by using a vascular bundle and facing cambia with phloem portion each other.
