PURPOSE: To produce L-psicose of rare saccharide useful as an industrial raw material for food industry, medicine industry, chemical industry, etc., in a sufficient amount by allowing a specific bacterium to act L-talitol in an aqueous solution. CONSTITUTION: A bacterium belonging to the genus Alcaligenes and capable of converting L-talitol into the L-psicose, such as Alcaligenes denitrificans subsp. xylosoxydans 701A (FERM BP-2735), is allowed to act on the L-talitol in an aqueous solution to obtain the L-psicose in a high yield. |
