PROBLEM TO BE SOLVED: To obtain boiled rice slight in scorched part, excellent in texture, capable of improving workability and yield of rice boiling and enriching calcium and magnesium, by adding a fixed amount of a water-soluble calcium salt, etc., to raw rice when rice is boiled by a conventional method. SOLUTION: When rice is boiled by a conventional method, 100 pts.wt. of raw rice is mixed with 0.01-5 pts.wt. of a water-soluble magnesium salt such as calcium chloride, calcium lactate or calcium gluconate and/or a water soluble magnesium salt such as magnesium chloride to give boiled rice slight in scorched part. |
