A device and process to monitor the stages of cheese production, comprises a device which can select the best moment for cutting and/or the hardening of the curds, a light source and captor (1) which is directed into the milk undergoing enzymatic hydrolysis with a temperature probe (2). Signals from these instruments are passed through a formagraph or coagulometer (6) to determine the state of the milk, curds or cheese.
