3 layer wet noodles is produced by (1) adding alkaline chemical, salt to a sauce whose component is wheat flour or wheat flour and starch and then mixing with water to make noodle substrate for outer layer, (2) adding sauce whose component is wheat flour or wheat flour and starch, a lignic salt or alkaline chemical, salt or the like and then mixing with water to form a noodle substrate for the inner layer as indicating pH as a neutrality-weak alkalinity, (3) pressing the above substrate for the inner and outer layer using a roller or the like to produce each noodle stand, combining and roll noodle stands for inner and outer layer to select noodle line while making noodle stand outer layer/inner layer/outer layer, (4) treating the above noodle line with a-treatment and adjusting pH of noodle line to acidity using acidic solution treatment method or a and acidic solution simultaneous treatment method. |
