PROBLEM TO BE SOLVED: To obtain a new derivative, comprising a specific aspartyl dipeptide amide derivative, producible from a readily available raw material, having high stability and excellent in safety and sweetness and useful as an active ingredient, etc., of a low-caloric sweetener. SOLUTION: This new aspartyl dipeptide amide derivative (salt) is represented by the formula [R1 is H or a 1-13C hydrocarbon; R2 and R3 are each a 1-3C alkyl and a 3-6C cycloalkyl including C<1> and R2 and R3 ; R3 is a 2-7C alkylthioalkyl, an alkylsulfonylalkyl, etc., when R2 is H; R4 is a (substituted) phenyl, benzyl, cyclohexyl, pyridyl, etc.; the structure of aspartic acid containing carbon at the C<1> position is (S) ; the structure including carbon at C<2> -position is (R), (S) or (RS); X is D-Ala, D-Val, D-Leu, D-Ser, etc.[ ]e.g. α-Laspartyl-D- isoleucine (R)-α-methylthiomethylbenzylamide] and is useful as a low-caloric sweetener, etc., having high stability and excellent in safety and sweetness. |
