摘要 PROBLEM TO BE SOLVED: To provide a maturing method, especially a refrigeration aging method capable of properly removing oily component and scorched flavor and effectively extracting a rich flavor characteristic of Awamori (a millet brandy), and a cooling and separation apparatus in the aging of the Awamori, in a refrigeration aging process by cooling the condensate in a distillation process or right after the distillation process to a cryogenic temperature. SOLUTION: This method matures the condensate 1 obtained through a distillation process in the production of Awamori by keeping at -5 to -30 deg.C under refrigeration over a fixed time, or by cooling the condensate 1 obtained through the distillation to -5 to -30 deg.C, removing the precipitate by a refrigeration separating process and keeping the supernatant over a fixed time. For the refrigeration separating process, a cooling pipe circuit in the flowing pass of the condensate 1 and, a refrigeration separating device precipitating the impurities in the condensate 1 on plural numbers of metal meshes placed in the cooling pipe circuit are installed.
