The production of carotenoid preparations in the form of coldwater-dispersible powders, and the use of the novel carotenoid preparations

Preparation of a powdered, cold water-dispersible carotenoid (CT) formulation (I) involves: (a) preparing a molecular dispersed solution of CT (optionally together with an emulsifier and/or edible oil) in a water-miscible organic solvent at elevated temperature and mixing the solution with an aqueous solution of a protective colloid, so that the hydrophilic solvent component in the aqueous phase is transferred and the hydrophobic CT phase is obtained as a nanodispersion; (b) tempering the obtained hydrosol at 40-90 degrees C; and (c) removing the solvent and water to obtain a dry powder. (I) obtained by the process is also claimed.
