PROBLEM TO BE SOLVED: To obtain a cholesterol gallstone-forming depressant capably of daily using as a preventive for cholesterol gallstone. SOLUTION: This depressant consists of a composition separated by transferring from buckwheat powder into liquid phase in a mixture of buckwheat powder and water, for example, a solid composition arising from buckwheat powder separated by transferring from buckwheat powder to liquid layer in a mixture of buckwheat powder and water adjusted to a pH value except about pH 4-5. The composition is utilized in a state of liquid layer or in a state excluded water from the liquid layer and asa food containing the composition.
