New nucleic acid (I) encoding a starch synthase (II) from wheat: (a) encodes 671 or 799 amino acid (aa) proteins, sequences given in the specification; (b) is a 2239 or 2825 bp sequence given in the specification, or the corresponding RNA; (c) is a sequence that binds to (a) or (b) and encodes (II); and (d) is equivalent to (a)-(c) within the degeneracy of the genetic code.
