PROBLEM TO BE SOLVED: To enable the continuous formation of a tubular dough of boiled and pounded rice for Kiritanpo (boiled rice in the form of a tube) with reduced equipment investment. SOLUTION: In this process, boiled nonglutinous rice is pressed into a molding tube 1 which is equipped with a core lever 3 and squeezed in a smaller diameter at its top end and extruded into a tubular rice dough. Then, the tubular rice dough is cut in a prescribed length and lightly browned. This implement is made by fixing the core lever 3 at the center of the inner wall of the tube which is equipped with a connector for connecting it to the extruding machine at its one end and a part of which is squeezed at a prescribed angle. |
