PROBLEM TO BE SOLVED: To obtain the subject new compound having a valuable sensory stimulating property (aromatic property) and expected to be used in a food, a field of luxurious article and an animal feed. SOLUTION: This furfuryl thioalkane is a compound of formula I [(n) is 0, 1; R is methyl or ethyl when (n) is 0, and is H or methyl when (n) is 1; R' is methyl or ethyl) and suitably a compound of formula II is cited. The compound of the formula I can be obtained by reacting (A) furfurylmercaptane, (B) a ketone of formula III (X is a halogen, suitably Cl, Br; R is methyl or ethyl) or of formula IV (R is H or methyl). Thus, a new compound capable of manifesting an effect of strengthening and mellowing a taste in a coffee and a mocha composition can be provided. |
