Use of acid sodium polyphosphates for inhibiting the germination of moulds and yeasts

The use is disclosed of acid sodium polyphosphates for inhibiting the germination of moulds and yeasts. The disclosed polyphosphate contains 70 to 77 wt % P2O5, 20 to 27 wt % Na2O, 2 to 3 wt % water and has an average linear condensation degree from 8 to 20.
