The tap is designed to safely take samples of a defined volume of stagnant or circulating fluid in a vacuum or pressurised enclosure, at low or high temperature. The tap includes: - fixing means (1) which enable it to be mounted onto a pipe or apparatus in a horizontal, vertical or inclined position; - a body (2), whose interior volume is designed to contain the liquid to be sampled; - an obturator in the form of a piston (5) which by means of a too and fro movement permits taking a sample safely; - a sample output pipe (6). The tap has a first joint (3) which is protected by a joint (14) integrated with its fixings (1) which acts as a scraper and which wipes the piston at each operation. The tap has a washing device via a lateral hole (9) which is also used for sterilisation or for injection of a neutral gas. The tap has a body (15) which permits mounting in any position without retention of any product. Any control system can be mounted on the taps stem (11) without any modification to the tap.
