There is provided a method of utilising date stones to produce animal fodder or other foodstuff, for example edible mushrooms, by subjecting the date stones to microbial degradation. Typically, the date stones are washed, milled and inoculated with the micro-organism of interest. Optionally the moisture content of the date stone material may be adjusted, and preferably the date stone material will be sterilised before inoculation. The protein content of the inoculated date stone material increases as a consequence of microbial growth, and the fibre content of the date stones is degraded. Suitable micro-organisms include fungi, especially Agaricus sp and Pleurotus sp . |
