PROBLEM TO BE SOLVED: To provide a new method for producing mannose by adding a microorganism to a mannose-containing saccharide solution, enabling to efficiently utilize the mannose-containing saccharide solution obtained from used yeast or yeast extract residues treated as an industrial waste to obtain the mannose. SOLUTION: This method for producing mannose comprises adding a microorganism to a mannose-containing saccharide solution. The mannose-containing saccharide solution is preferably obtained by adding an acid such as hydrochloric acid to yeast and/or yeast extract residues to hydrolyze components in the yeast, etc., neutralizing the hydrolyzed product with a base and, if necessary, desalting the neutralized product with an ion exchange resin, etc. The microorganism is preferably a microorganism assimilating glucose but not assimilating the mannose, preferably lactobacillus belonging to the genus Bifidobacterium, the genus Lactobacillus, etc. The microorganism is preferably added to the mannose-containing saccharide solution in an amount of one platinum loop to 2g (converted into the dried microbial cells) per ml of the saccharide solution. When the microbial cells are suspended in the saccharide solution, the microbial cells are preferably homogeneously dispersed by a means such as a stirring means or an ultrasonic wave means. |
