PROBLEM TO BE SOLVED: To obtain the subject food useful as a cereal for breakfast, etc., excellent in productivity, storage stability and appearance, having physical characteristics in a wide range by adding a water phase containing a hydrocolloid, etc., to a hot extruder, mixing the water phase with a product component and water and treating the mixture under a specific condition. SOLUTION: A water phase containing preferably 0.5-15% of a hydrocolloid (mixture) such as iota carrageenan is prepared. The water phase is added to a hot extruder such as a single screw or a twin-screw and mixed with a product component and water. The mixture is heated to 120-180 deg.C and the product is extruded and the extruded product is dried to 2-10% water content to give a swollen food product for human or animal consumption. Preferably, the extrusion is carried out for 20 seconds to three minutes. |
