Process for obtaining a food composition based on banana, which involves crushing peeled banana, in the presence of ascorbic acid and citric acid, and filtering the resultant mash, homogenizing said mash in the presence of sugar and flavourings, finally subjecting the resultant composition to sterilization, under UHT conditions, for subsequent packaging under aseptic conditions. |
