The present invention provides purified leucoanthocyanidin reductase polypeptides and methods for obtaining same. The present invention further provides isolated nucleic acid molecules which encode leucoanthocyanidin reductases of plants and recombinant leucoanthocyanidin reductase polypeptides encoded therefor. The isolated and recombinant polypeptides and isolated nucleic acid molecules of the invention are useful in the production of transgenic crop plants and fodder crops, in particular bloat-safe forage crops and other crops with altered nutritional value, increased disease-resistance and pest-resistance or improved malting qualities.
