PROBLEM TO BE SOLVED: To prepare the subject mix, good in sticking of a coating to an ingredient material, excellent in a flowering state and capable of providing a Tempura (seafood or vegetables dipped in a batter and deep-fried) having the coating of a crispy texture by including a durum wheat flour and wet heat-treated wheat flour therein. SOLUTION: This coating mix for a Tempura is obtained by including 30-50wt.% durum wheat flour and 30-40wt.% wet heat treated wheat flour as essential ingredients and, as necessary, 5-15wt.% oxidized starch therein. The particle diameter of the durum wheat flour is preferably 30-350μm. |
