PROBLEM TO BE SOLVED: To provide a method for processing food capable of giving a lowsalt and relatively inexpensive processed food retaining the deliciousness of the corresponding stock food and excellent in preservability. SOLUTION: A sea water filtrate obtained by filtering sea water through a filter medium with a filter perforation size of 0.01-0.1μm is chilled to pref. 2-7 deg.C, and natural salt is then added to the chilled sea water filtrate followed by agitation for about 10min to prepare a dip pref. 4-10wt.% in salt concentration. The dip is kept pref. at 2-7 deg.C, and a stock food such as clod fillets is then immersed in the dip for about 1-5h to impregnate the stock food with the salt ingredient until the salt content of the stock food comes to pref. 0.5-2wt.%. |
