Compounds of formula (I) and their ammonium or alkali(ne earth) metal salts are new. A = R<1>R<2>R<3>C- or R<4>C(-O); R<1>-R<3> = H, optionally substituted 1-40C alkyl or optionally substituted 2-40C alkenyl, either of which may contain OH, ether or carboxy groups; R<4> = optionally substituted 1-40C alkyl or optionally substituted 2-40C alkenyl, either of which may contain OH, ether or carboxy groups ; x = 0-40 for when A is R<1>R<2>R<3>C- or 1-40 when A is R<4>C(-O) ; R<5> = H or methyl ; and R<6>, R<7> = H, 1-40C alkyl, 2-40C alkenyl, 6-40C aryl (or a heteroalkyl or heteroaryl equivalent), which may be optionally substituted. Also claimed are (i) the preparation of (I) by reacting chloroformates of formula (II) with amino-carboxylic acids of formula (III) at pH 8-12 and (ii) washing agents containing 0.1-40 wt.% (I) :
