In an assembly for analysis of trace elements in liquid food, the food flows through a main pipe (12) from which a fraction is tapped through a tube (16) incorporating a sensor (24) and a pump (18) before return (26) to the main pipe downstream of the sample abstraction point. The sample tube (16) has a section which is approximately parallel to the main pipe(12). The sample pipe inlet (22) directly faces the oncoming flow of liquid in the main pipe (12) and the pump (18) largely prevents a disruption of liquid flow in and around the tube inlet (22), but rather effects an increase in fluid intake. The sensor (24) incorporates a number of exchangeable filter inserts and the pump (18) is rated to deliver a flow through the tube (16) which is equal to or greater than that of the flow per unit cross-sectional area of the main pipe (12). After filtration, the sample is returned through the second section of the tube (26) to the main pipe (12).
