PROBLEM TO BE SOLVED: To industrially and advantageously produce the subject lipid useful for medicines, glucide engineering and cell engineering, etc., by carrying out the contact reaction of a sphingolipid with a microorganism having the ability to produce a sphingolipid ceramide deacylase and then collecting the resultant product. SOLUTION: The contact reaction of a sphingolipid (e.g. a ganglioside GM1) with a bacterium, belonging to the genus Pseudomonas [e.g. Pseudomonas sp. TK 4 (FERM BP-5096)] or a bacterium, belonging to the genus Shewanella [e.g. Shewanella alga NS-589 (FERM P-15700)] and having the ability to produce a sphingolipid ceramide deacylase in the presence of a methylated substance of β-cyclodextrin (e.g. 2,6-O-dimethyl-β-cyclodextrin) and the resultant product is then collected to efficiently afford a large amount of the objective sphingolipid useful for medicines, glucide engineering, cell engineering, etc., at a low cost. |
